Adapted from Cook Eat Love, serves four
1 seedless watermelon
4 ounces feta cheese
1 cup fresh mint
1/4 cup olive oil
1/4 cup balsamic vinegar
fresh ground pepper
Remove the rind from the watermelon and chop into cubes. Cube the feta cheese. Roughly chop the mint.
Add all of the ingredients to a large bowl and toss to combine.
