Pomegranate Kale Salad

Similar to the  kale salad with warm bacon vinaigrette, this salad has become a staple in our house. The original recipe calls for wild rice but I find it just as yummy without.

Adapted from Pinch of Yum, serves four


Seeds from half a pomegranate
3 cups kale, stems removed, chopped
1/2 cup walnuts, toasted, chopped
1/2 cup feta cheese

1/2 onion
2 tablespoons olive oil
2 tablespoons water
2 tablespoons honey
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1 tablespoon lemon juice


Combine the first four ingredients in a large bowl.

Combine the remaining ingredients in a blender. Blend until smooth.

Transfer the dressing to the bowl. Toss to combine.
